Lamingtons are well-known to be quick, easy and delicious. We teamed up with Ilse van der Merwe, better known as The Food Fox, to show you how to give these traditional chocolate dipped cake squares a festive caramel update.
Salted Caramel Lamingtons (makes about 12)
1 sponge cake (round or square)
1 cup (250 ml) runny caramel sauce (store bought or homemade)
A pinch of salt flakes
1 cup (250 ml) desiccated coconut
Method
Cut the sponge cake into squares of about 5 x 5 cm. Place the caramel sauce in a wide shallow bowl. Add a pinch of salt flakes and stir well. Place the coconut in another bowl. Dip each square into the caramel, then immediately into the coconut, covering all sides. Arrange on a serving plate and serve. Can be stored in an airtight container for 3 days.
Tip: For a quick homemade caramel sauce, place 250 ml cream in a small saucepan. Add 1 cup (250 ml) tightly packed soft brown sugar and bring to a boil. Turn heat to very low, then cook for 5 minutes until caramel in colour, stirring often. Cool before using.
